Those that know will tell you that Yellow Box is the utopia of fine Australian honey. Honeybees collect the nectar from a single eucalyptus tree species known as  Yellow Box (or Eucalyptus Melliodora). Our beehives are in bush land in Victoria’s Northern Country. The honey is light golden in colour. It’s not overwhelmingly sweet, but has a beautiful smooth and mellow buttery beeswax taste. With its refreshing slightly citrus fruity finish and aroma. Overall, we rank Yellow Box honey as mild with a tasty light finish. As an early summer flowering tree, the honey has good density – not too thick, not or runny – but just right. Fantastic in smoothies, on breakfast cereals, porridge, toast or simply indulge off the spoon.

A significant health property of Yellow Box honey is its proven Glycemic Index (GI). It is rated at 35 making it the lowest GI of any Australian honey, or possibly the world. Suitable for those with type two diabetes, athletes or anyone wanting to control their blood glucose levels. The honey has a high fructose to glucose ratio that contribute to its low GI. Another interesting, exciting and recent discovery are some eucalyptus honeys are pre-biotic. The health property sets up the gut to allow the good bacteria to grow while making it hostile for the bad. Yellow Box is one of those honeys.

Yellow Box is slow to candy, remaining liquid for some months. Its high fructose to glucose ratio is a reason for this.
